What's in My Garden?! Check Out My Fruit Trees! Winter Edition!

There’s something magical about winter’s superstar fruit: Yellow, pink, and orange-colored anything is just what we need to brighten up a cold, gloomy day. Plus, they just might help you stave off that winter cold, thanks to all that vitamin C. Next time you’re buying produce, stray from your trusty bag of clementines and pick a variety instead: pomelos, Meyer lemons, Cara Cara oranges, tangelos... there are tons to choose from, and conveniently, they all taste great in these citrus-filled recipes.

Orange Avocado Salad With Lime Dressing

OK, guys... how good-looking is this salad?! Whip it out at a dinner party or just for a cozy night in—it’s a surefire winner either way. This version uses Cara Cara, blood orange, and navel oranges, but any mix of oranges will do. Orange slices are layered with creamy avocado, crunchy scallions, and a cilantro-lime dressing. Who knew simple could taste so good?

Lemon and fish are a pretty standard pairing, but this cod recipe takes it up a notch by adding oranges; basil; and a light, buttery citrus dressing to the dish. Serve fresh over quinoa, brown rice, or with a big serving of veggies (or both).

Slow Cooker Citrus Chicken

We don’t know about you, but winter makes us want to break out the slow cooker more often. This easy recipe can be cooked on low all day and requires just six ingredients, including a lemon-lime-orange trifecta. Eat the tender chicken legs and thighs on their own, in a salad, or as a base in a rice bowl.

Raw Citrus Coconut Cheesecake

These super-cute mini-cheesecakes remind us of a Key lime pie, but use tons of baking swaps to make them way healthier. Almonds and pistachios help form the nutty base, while medjool dates and desiccated coconut (just dried, shredded coconut, btw) sweeten it up. Garnish with chopped lime rind, crushed pistachios, and coconut chips for a toasty crunch.

Winter Berry and Citrus Salad

This salad had us at blackberry vinaigrette. The naturally sweet dressing goes over greens, mandarin oranges, creamy feta, pistachios, and dried cranberries, and the result is another Snap-worthy salad. We’re drooling just looking at it.

Citrus Ginger Smoothie

Healthier pancakes are the perfect weekend breakfast treat for when it’s too chilly to leave the house for brunch. This lemon poppy seed stack gets an A+ in looks and taste, and uses healthy swaps like whole-wheat pastry flour, Greek yogurt, and a mix of whole eggs and egg whites.

Greek Lemon Chicken Soup

Chicken soup is a winter staple, but the store-bought kind can be loaded down with sodium. Make your own healthier version with shredded chicken breasts, onions, lemon, feta, couscous, and chicken broth. It’s a fun Greek twist on an old staple and can be made in big batches to store for later.

Citrus Chicken Quinoa Salad

If you haven’t noticed, we’re all about the bright citrus salads. Crispy quinoa makes this one feel a little heartier, and buttery avocado is always a good idea. But we’re really into the sweet, fresh dressing, which brings together lime juice, cilantro, honey, olive oil, and orange juice.
